Health & Food Week: Good Eats
Now that Health and Food week is coming to a close, I figured there'd be no better way to cap off the week than with a few recipes to help you eat healthy while pinching those pennies. I asked some of my friends for some good recipes and conjured up a few of my favorites.
Apricot Chicken (submitted by Shelby)
Cashews (if desired)
Mix jam, salsa, and mustard. Set aside. Cut chicken into chunks and stir fry on skillet with cashews. Add jam mix and simmer for 15 minutes. Serve over brown rice.
Chicken Nugget Salad (submitted by Julia)
Your favorite salad fixin's
Cooked chicken nuggets
Beef & Veggie Ramen Noodles (submitted by Hannah)
Ramen noodle seasoning
Combine first three ingredients. Then pour the seasoning over the noodle mix.
Roasted Vegetables
Chop Brussel's sprouts, zucchini, yellow squash, onions, and red potatoes into bite sized pieces. Toss with olive oil and balsamic vinegar. Put aluminum foil on a baking sheet and spray with cooking spray. Spread the vegetables into an even layer. Sprinkle with either curry powder or garlic salt. Roast in oven at 350 degrees for about 20 minutes. (I never time this one... I usually just go on how they look. Once the potatoes are a bit brown, that's when you'll know they're done.)
Hummus
Olive oil
I never do exact measurments on this one because I do it for my taste, so feel free to add more or less. Combine all of these ingredients in a blender or food processor. Eat with cucumbers, red bell peppers, or any other hummus-friendly snacks.
So the next time you're hankering for snack or a good meal but want to make something good for you body that won't hurt your budget, try one of these. Odds are you already have most of these ingredients at home!
